Sweet norwegian pancakes with sugar

Ingredients

1-quart buttermilk
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 T. sugar
3 eggs
2 C. flour

Directions:

Beat all ingredients together well with egg beater. Drizzle a small amount of oil on pancake grill. Sprinkle a few drops of water on grill. If water drops sizzle, grill is hot enough to fry pancakes. Scoop batter and pour onto grill. These are VERY thin, crepe-like pancakes. When finished, try spreading a fruit filling into the center and rolling up the pancake. Sprinkle with powdered sugar or serve with some whipping cream on top. Or simply, finish with butter, cinnamon sugar or your favorite syrup. Enjoy!
